Why it works: Apple and lemon are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 7,551 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Apple Pudding
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 400°F (200°C).
Beat the 5 egg yolks and mix with the stewed apples, adding sugar and lemon to taste.
Beat the 2 egg whites to stiff peaks, then stir in 3 tablespoons of fine sugar and a little lemon.
Pour the apple mixture into a pudding dish, then top with the beaten egg whites.
Bake in the preheated oven until golden.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Yolks enrich and thicken the apple base, while whipped whites set into a light, airy topping.
- Stewed apples
- Provide the moist, soft body and fruity flavour of the pudding base.
- Sugar
- Sweetens the dish and helps keep the beaten egg whites stable.
The step that matters
Beating the egg whites to stiff peaks. Whites beaten only partly will not hold enough air to rise and brown lightly on top, so the topping turns flat and dense. Overbeaten whites turn dry and grainy and cannot blend smoothly. Stop when the peaks stand upright and glossy.
Swap the apple
How well each one fits the dish's main ingredients (egg, sugar, lemon):
- Orangefits better
- Vanillafits better
- Limefits better
- Applethe original
Fit is the average pairing score against egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
