Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the main salty, savory flavor and the flaky texture of the balls.
Mashed potatoes
Bind the fish together and add moisture and body to the mixture.
Egg
Binds the mixture so the balls hold their shape while frying.

The step that matters

Soak the codfish thoroughly. Dried salt cod is very salty and firm; soaking draws out excess salt and rehydrates the fish so the balls taste balanced and turn tender rather than tough.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, pepper, flour):

  1. Chivefits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
