Potato Rusk

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Mix the yeast, mashed potatoes, sugar, and eggs in a bowl.

  2. Add the butter and lard (or all butter) to the mixture.

  3. Stir in enough flour to form a soft dough.

  4. Let the dough rise until light.

Shape and bake

  1. Turn the dough onto a floured surface and roll it out with a rolling pin.

  2. Cut the dough into shapes with a cake cutter and place them in pans.

  3. Let the shapes rise until very light, then bake them in a 400°F (200°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast
Produces gas that makes the dough rise and become light.
Mashed potatoes
Add moisture and softness to the dough.
Eggs
Add structure and richness, helping bind the dough.
Butter and lard
Add fat that tenderizes the dough and enriches its texture.
Sugar
Feeds the yeast and adds sweetness and browning.

The step that matters

Let the shapes rise until very light. Yeast needs time to produce gas and stretch the dough's structure. If the shapes are underproofed, the rusks will bake up dense; the rise must be complete before baking.

Swap the potato

How well each one fits the dish's main ingredients (sugar, egg, butter, flour):

  1. Chivefits better
  2. Leekfits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against sugar, egg, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
