What each ingredient does

Oatmeal
Provides the starch that thickens the water into a porridge as it cooks.

The step that matters

Stirring the oatmeal in thoroughly. Oatmeal dropped into hot water can clump, and dry pockets stay hard while the outside becomes gluey. Thorough stirring spreads the grains evenly so they hydrate and thicken uniformly.
