Why it works: Okra and lima beans share more aroma than cooks usually use. They rank in the top 3% of all ingredient pairs, and cooks put them together in 64 recipes. Both carry 2-isobutyl-3-methoxypyrazine, which smells green bell pepper, earthy. The science ↓

Louisiana Gumbo Okra

Ingredients

Directions

Brown the chicken

  1. Heat lard or bacon fat in a pot.

  2. Sauté the onion until golden, then remove and discard the onion.

  3. Fry the floured chicken pieces in the same fat until browned.

  4. Transfer the browned chicken to a soup pot.

Stew

  1. Fry the sliced okra in the same pot, then add the okra to the pot with the chicken.

  2. Cover the mixture with hot water or stock.

  3. Add any cold meat, if using.

  4. Let the mixture stew slowly for 4 to 6 hours.

  5. About halfway through cooking, add the tomatoes, salt, corn, lima beans, green pepper, and butter.

  6. If the gumbo becomes too thick, thin it with a little hot water as needed.

Serve

  1. Serve hot with boiled rice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat and flavor, browned first to build richness in the stew.
Okra
Releases a natural thickener as it cooks, giving the gumbo its body.
Tomatoes
Add acidity and liquid, balancing the richness of the fat and meat.
Lard or bacon fat
Carries the heat for browning and adds savory, rich flavor.
Onion
Sweetens and builds aromatic flavor when cooked until golden.

The step that matters

Browning the floured chicken. Flour coating and fat-fried browning create the Maillard flavors and color that give the gumbo depth. Pale or steamed chicken produces a flat, washed-out stew.
