Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, beat the eggs separately.

  3. Add the cream, salt, pepper, and cracker crumbs to the eggs and mix well.

Bake and serve

  1. Grease the moulds with butter and fill them partly with the egg mixture.

  2. Place the moulds in a baking pan filled with hot water.

  3. Bake for 15 minutes.

  4. Serve with white sauce and garnish with chopped parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set and provide the main structure of the timbales as they cook.
Heavy cream
Adds moisture and richness, keeping the custard tender rather than dry.
Cracker crumbs
Add body to the egg mixture and help soak up liquid for a firmer texture.

The step that matters

Baking in a water bath. Placing the moulds in hot water moderates the oven heat around the custard. Gentle, even heat keeps eggs from curdling or turning rubbery, giving a smooth, tender set.

Swap the parsley

How well each one fits the dish's main ingredients (egg, pepper, cream, butter, sauce):

  1. Nutmegfits about as well
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Capersfits about as well

Fit is the average pairing score against egg, pepper, cream, butter, sauce. Candidates are from the same food group and used in at least 100 recipes.
