Pomme De Terre Souffles
Ingredients
Directions
Select the finest potatoes, not new ones.
Cut two lengthwise slices from each potato, a quarter of an inch thick.
Soak the slices in cold water for one hour.
Drop the slices into a pan of boiling lard.
Once they float, remove them with a strainer and place on a clean napkin.
Serve immediately.
Recipe from a historical cookbook (Internet Archive).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
