Lemon Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the eggs with sugar and salt until frothy and light.

  3. Roll a lemon in the sugar to extract the oil, then squeeze the juice from the lemon.

  4. Add the lemon juice to the beaten mixture and mix well.

Bake and serve

  1. Pour the mixture into the prepared pie pan and bake until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the filling into a custard as they cook, and add structure and richness.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright flavour that cuts through the richness of the eggs.

The step that matters

Bake until set. Eggs thicken as their proteins coagulate with heat. Pulling the pie too early leaves a runny filling, while baking too long can make it weep or turn rubbery.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
