What each ingredient does

Lobster
Provides the main meat and flavor of the salad.
Egg yolks
Emulsify the oil and vinegar into a thick, creamy sauce.
Salad oil
Adds richness and moisture, carrying the sauce's flavors.
English mustard
Adds sharp heat and helps stabilize the emulsified sauce.
Vinegar
Adds acidity that brightens the rich sauce and balances the sweetness.
Hard-boiled eggs
Add body and a mild, creamy richness to the salad.

The step that matters

Mix the sauce gradually. Adding the oil slowly while mixing lets the egg yolks emulsify it into a stable, thick sauce. Adding it too fast can cause it to separate and stay thin and greasy.

Swap the lettuce

How well each one fits the dish's main ingredients (lobster, egg, mustard, vinegar, sugar, pepper):

  1. Horseradishfits better
  2. Capsicumfits about as well
  3. Lettucethe original
  4. Cucumberfits about as well

Fit is the average pairing score against lobster, egg, mustard, vinegar, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
