Why it works: Cabbage and cauliflower match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 305 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

What each ingredient does

Purple red cabbage
Forms the main body of the pickle and becomes crisp and tender as it pickles.
Coarse sea salt
Draws water out of the cabbage, firming its texture before pickling.
Vinegar
Adds sharp acidity that preserves the cabbage and gives the pickle its tang.
Red beet-root
Adds color to the pickle.

The step that matters

Salting and draining the cabbage. Salt pulls water out of the cabbage layers. If the cabbage is not salted and drained long enough, it stays watery and soft, and the vinegar is diluted as it is poured over.

Swap the cauliflower
