What each ingredient does

Green peppers
Act as the edible shell that holds the filling while it cooks.
Minced cold meat
Provides the savory, protein-rich body of the filling.
Bread crumbs
Absorb liquid and help bind the filling so it holds its shape.
Melted butter
Adds fat for richer flavor and a moister, more tender filling.
Stock or water
Creates steam in the baking dish to soften the peppers and keep the filling moist.

The step that matters

Soak the peppers in cold water for 30 minutes, then drain.. Soaking softens the pepper walls so they cook through at the same rate as the filling. Draining well keeps excess water from diluting the filling and making the peppers soggy.

Swap the onion

How well each one fits the dish's main ingredients (pepper, meat, butter, bread, tomato, sauce):

  1. Capsicumfits better
