Fruit Sponge Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the eggs until fluffy.

  3. Add baking powder, sugar, flour, lemon extract, vanilla extract, and cold water; mix well.

  4. Divide the batter into two greased cake pans.

  5. Bake until golden.

Make the filling

  1. Combine minced orange, chopped pineapple, sliced banana, lemon juice, and ¼ cup sugar for the filling.

Make the icing and finish

  1. Boil pineapple syrup with 2 cups sugar until thick for the icing.

  2. Beat 4 egg whites until stiff.

  3. Gradually pour the hot syrup over the egg whites while beating.

  4. Cook the mixture over steam until it reaches the right consistency to ice the cake.

  5. Ice the top of the cooled cake with the icing, then serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Trap air and set with the flour to give the cake its light, sponge-like structure.
Baking powder
Releases gas in the batter so the cake rises and becomes airy.
Flour
Provides the starch and protein that set during baking to form the cake's structure.
Sugar
Sweetens the cake and helps keep it moist and tender.
Pineapple syrup
Cooked with sugar until thick, it forms the sweet, glossy base of the icing.

The step that matters

Pouring the hot syrup into the egg whites. Pour the hot syrup slowly while beating. Adding it too fast can cook the whites unevenly or deflate the foam, leaving a loose, unstable icing.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, flour, vanilla, orange, pineapple, banana):

  1. Figfits better
  2. Strawberryfits better
  3. Peachfits better
  4. Lemonthe original

Fit is the average pairing score against egg, sugar, flour, vanilla, orange, pineapple, banana. Candidates are from the same food group and used in at least 100 recipes.
