Game Puddings

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Make a batter with flour, milk, eggs, pepper, and salt.

  2. Pour a little batter into the bottom of a pudding dish.

  3. Add seasoned poultry or game and a little shredded onion.

  4. Pour the remaining batter over the top.

  5. Bake in a slow oven at 300°F (150°C) until set.

  6. For a dumpling, stuff a chicken, partridge, or pigeon with chopped oysters.

  7. Lay the stuffed bird on its back in the paste and place a bit of butter rolled in flour on the breast.

  8. Close the paste to form a dumpling, place it in hot water, and boil for 2 hours.
