A German Pudding

Ingredients

Directions

Make the rice and apple filling

  1. Boil the rice in milk with lemon peel until very tender, then drain.

  2. Mix the drained rice with apples boiled to a pulp, white wine, egg yolks, orange, citron, and sugar.

  3. Line a mold with pastry, beat the egg whites to a strong froth, and mix with the other ingredients.

  4. Fill the mold and bake until golden brown.

Make the bread pudding and boil it

  1. Pour boiling milk over bread crumbs and let soak.

  2. Beat the butter to a cream, then add the egg yolks and mix well.

  3. Drain the milk from the bread, then add the soaked bread, pounded sugar, and grated lemon peel.

  4. Whip the egg whites to a solid froth and fold in last.

  5. Butter a cloth, place the pudding inside, tie loosely, and boil in water for 1 hour.

Make the sauce and serve

  1. For the sauce, boil cream, raisin wine, and sugar rubbed on lemon peel.

  2. Add beaten egg yolks and lemon juice, mix well, and heat without boiling.

  3. Serve some sauce over the pudding and the rest in a sauceboat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Cooked to a pulp, they add moisture and sweet, tender body to the filling.
Egg whites
Whipped to a froth, they lighten the pudding and help it rise and set.
Egg yolks
Enrich the custard-like texture and help bind the pudding and sauce.
Bread crumbs
Soaked in hot milk, they form the body of the pudding and absorb liquid.
Butter
Creamed with yolks, it adds richness and a tender crumb.
Rice
Cooked until very tender, it gives the filling a soft, starchy body.

The step that matters

Folding in the egg whites. Whites whipped to a stiff froth trap air that lightens the pudding; if they are deflated by vigorous stirring or left to sit, the pudding turns dense.

Swap the apple

How well each one fits the dish's main ingredients (rice, milk, lemon, white wine, egg, orange, sugar):

  1. Vanillafits better

Fit is the average pairing score against rice, milk, lemon, white wine, egg, orange, sugar. Candidates are from the same food group and used in at least 100 recipes.
