Why it works: Garlic and pepper are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 27,090 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Roast Leg of Lamb
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the lamb
Remove the caul from the lamb.
Wipe the meat with a wet cloth.
Make small incisions 1-2 inches deep.
Insert garlic slivers every three inches.
Sprinkle the lamb with coarse sea salt and black pepper.
Roast
Place the lamb in a hot roasting pan.
Pour boiling water over the lamb.
Dredge the lamb with flour.
Place the lamb in a 400°F (200°C) oven.
Baste with water and drippings every 15 minutes until done.
Reduce the oven heat after the first 30 minutes.
Roast for 1¾ to 2 hours.
Serve
Serve with mint sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Leg of lamb
- The main cut, which becomes tender and juicy as its connective tissue softens during slow roasting.
- Garlic
- Slivers pushed into the meat release aroma and flavour as the lamb cooks.
- Flour
- Dusted on the surface, it helps form a crust that browns and crisps in the oven.
- Boiling water
- Adds moisture and steam to the pan, keeping the surface from drying out early.
The step that matters
Reduce the oven heat after the first 30 minutes. The high starting heat sets and browns the outside. Lowering the heat then lets the centre cook through evenly without the surface burning or drying out.
Swap the garlic
How well each one fits the dish's main ingredients (lamb, pepper, flour):
- Turmericfits better
- Parsleyfits better
- Cuminfits better
- Garlicthe original
Fit is the average pairing score against lamb, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
