Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the oats

  1. Pour boiling water over rolled oats and cover the oats.

  2. Let the oats cool.

Make the dough

  1. Dissolve yeast with brown sugar in a small amount of warm water.

  2. Add 1 cup of flour and beat the mixture for 10 minutes.

  3. Let the mixture rise for 1 hour.

  4. Add the remaining flour.

  5. Knead the dough.

  6. Let the dough rise for about 1.5 hours.

Shape and bake

  1. Mold the dough into loaves.

  2. Allow the loaves to rise for 1 hour.

  3. Bake in a preheated oven at 350°F (175°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rolled oats
Soaked in boiling water, they add moisture and a tender, hearty crumb.
Yeast
Ferments the sugars and produces gas that makes the dough rise.
Flour
Provides gluten structure that traps gas and holds the loaf's shape.
Brown sugar
Feeds the yeast and adds sweetness and a mild molasses flavour.

The step that matters

Let the dough rise fully before shaping and baking. Yeast needs time to produce enough gas to lighten the dough. Under-proofed loaves stay dense, while over-proofed dough can collapse in the oven.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (oats, sugar, flour):

  1. Almondfits better
  2. Flaxseedfits better
  3. Mixed nutsfits better
  4. Nutsthe original

Fit is the average pairing score against oats, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
