Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Preserved Peaches
Ingredients
Directions
Prepare the peaches
Cut each peach longitudinally to the stone and twist to remove the stone.
Weigh the prepared peaches and match with an equal weight of sugar.
Make the syrup
In a preserving kettle, combine sugar and water; let it dissolve completely.
If using, add the beaten egg white or dissolved isinglass to the syrup.
Bring the syrup to a boil, skimming off any scum that forms.
Once the scum stops rising, remove the syrup from heat and wash the kettle.
Cook and preserve
Return the syrup to the kettle, add the peaches, and boil for about 1 hour and 15 minutes until translucent.
Carefully remove the peaches and place them on dishes to cool.
Let the syrup cool to lukewarm, then pour it over the peaches in jars.
Seal the jars the next day.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- White cling-stone peaches
- Provide the fruit that becomes tender and translucent in the sugar syrup.
- Sugar
- Sweetens the fruit and, at high concentration, helps preserve it.
- Egg white
- Optional clarifier that helps collect and lift scum from the syrup as it boils.
The step that matters
Skimming the syrup while it boils. Scum forms on the surface as the syrup heats and can cloud the syrup and spoil the look of the fruit if left in. Removing it fully before adding peaches keeps the syrup clear.
Swap the peach
How well each one fits the dish's main ingredients (sugar, egg):
- Vanillafits better
- Raisinfits better
- Lemonfits better
- Peachthe original
Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
