Make the jelly

  1. Mix 1 teaspoon of the farina with a little cold water until smooth.

  2. Pour boiling water over the mixture to create a thick jelly.

  3. Boil the mixture for 2-3 minutes.

  4. Sweeten the jelly to taste.

  5. Flavor the jelly with lemon or nutmeg.

  6. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White potatoes
Their starch, released as farina, becomes the thickening base of the jelly.
Farina (in the method)
Potato starch that thickens the liquid into a jelly when heated with water.

The step that matters

Pour boiling water over the mixture to create a thick jelly. Starch granules only thicken once heated in water past their gelatinization temperature. Adding boiling water to the smooth paste lets them swell and set; a lukewarm pour may leave it thin and lumpy.

Swap the potato

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Kalefits better
  4. Potatothe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
