Fish Farce

Ingredients

Directions

Prepare the farce

  1. Pound the whitefish until smooth.

  2. Pound the panard and season with salt, butter, and white pepper.

  3. Mix the fish and panard, then gradually add the eggs and pass through a fine sieve.

Mold and poach

  1. Prepare a mold by sprinkling it with coral.

  2. Fill the mold with the mixture using a piping bag and a large plain pipe.

  3. Knock the mold on the table to set the mixture firm.

  4. Poach in a stew‑pan with a fold of paper at the bottom, covered with boiling water.

  5. Watch for the water to reboil, then reduce heat and poach until firm.

What each ingredient does

Whitefish
Forms the smooth body of the farce, giving it its main structure once pounded.
Panard
Adds soft bread body that helps the farce hold moisture and stay tender.
Eggs
Bind the mixture and set when poached, giving the farce its firm texture.
Butter
Adds fat for richness and a smoother, more tender mouthfeel.

The step that matters

Poaching at a gentle simmer. Once the water reboils, lowering the heat keeps the eggs and fish proteins from tightening too fast. Gentle poaching produces a firm but tender set instead of a rubbery or cracked texture.

Swap the white pepper

How well each one fits the dish's main ingredients (whitefish, butter, egg):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against whitefish, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
