What each ingredient does

Peaches
They are the fruit being preserved, providing the main flavor and texture of the finished jars.
Sugar
Sweetens the fruit and, dissolved in water, forms the syrup that surrounds the peaches.

The step that matters

Pour hot syrup over the peaches and seal immediately. Hot syrup and hot jars help drive air out and keep the fruit submerged. Sealing right away helps create a vacuum as the contents cool, which is what keeps the jars shelf-stable.
