Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the main body and savoury flavour of the balls.
Mashed potato
Adds starch and moisture that help the mixture hold together and stay soft.
Egg
Binds the mixture so the balls keep their shape while cooking.
Flour
Forms a dry coating that helps the outside brown and crisp when fried.

The step that matters

Chill the formed balls until firm. Cooling firms the fat and starch in the mixture, so the balls hold their shape instead of breaking or spreading in the hot fat.

Swap the potato

How well each one fits the dish's main ingredients (vinegar, egg, pepper, flour):

  1. Capsicumfits better
  2. Shallotfits better
  3. Mustardfits better
  4. Potatothe original

Fit is the average pairing score against vinegar, egg, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
