What each ingredient does

Eggs
Bind the mixture and add structure as they set during cooking.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Flour
Provides the starch that gives the pudding its body and structure.
Ground almonds
Add nutty flavor and a dense, moist texture.
Sugar
Adds sweetness and helps give the pudding a tender crumb.

The step that matters

Boil for 3 hours or more. The pudding must cook long enough for the eggs and flour to set fully through the center. Steam-boiling at a steady simmer with the mold kept covered and topped up with water keeps the heat even and the pudding moist.

Swap the mace

How well each one fits the dish's main ingredients (almond, sugar, egg, currant, raisin, angelica, flour):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against almond, sugar, egg, currant, raisin, angelica, flour. Candidates are from the same food group and used in at least 100 recipes.
