Poached Apricots

Ingredients

Directions

  1. Slice the sponge cake and place halves of apricots on top, round sides up.

  2. Whip the egg whites with sugar until stiff peaks form.

  3. Spoon the whipped egg whites around the apricot halves to resemble poached eggs.

  4. If available, add whipped cream on top and drizzle with apricot juice for flavor.
