Plum Cake

Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Preheat the oven to 300°F (150°C).

  2. In a large bowl, mix the raisins, currants, brown sugar, chopped almonds, citron, lemon peel, molasses, and softened butter.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Season with cloves, cinnamon, and nutmeg to taste.

  5. Stir in the sweet milk and Magic Soda last.

  6. Gradually add flour until the batter is thick enough not to run.

  7. Brown the flour on the stove and sift it before using.

Bake

  1. Pour the batter into a greased cake pan and bake in the preheated oven until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set in the oven.
Butter
Adds richness and tenderness to the crumb.
Flour
Provides the structure that holds the fruit and batter together as the cake bakes.
Molasses
Adds dark color, moisture, and a deep sweetness.
Magic soda
Releases gas that helps the cake rise and lighten.

The step that matters

Gradually add flour until the batter is thick enough not to run. Too little flour leaves a batter that spreads and bakes heavy and wet, while too much makes the cake dense and dry. Adding it gradually lets you stop once the batter holds its shape.

Swap the currant

How well each one fits the dish's main ingredients (raisin, sugar, almond, lemon, molasses, butter, egg):

  1. Figfits better

Fit is the average pairing score against raisin, sugar, almond, lemon, molasses, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
