What each ingredient does

Flour
Thickens the vinegar mixture so the pickle becomes smooth and thick as it cooks.
Dry mustard
Adds sharp, pungent flavor that carries through the vinegar and vegetables.
Cider vinegar
Provides the acidity that preserves the pickle and gives it its tang.
Turmeric
Colors the pickle a bright yellow and adds a mild, earthy flavor.
Sugar
Balances the sharp acidity and rounds out the sweetness of the pickle.

The step that matters

Cook slowly for 1 hour or more, stirring often. Flour thickens as it heats and can scorch on the bottom of the kettle. Slow cooking with frequent stirring keeps the mixture smooth and evenly thick.
