Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the bulk and tart flavour, and its pectin and fibre help the jam set as it cooks.
Sugar
Sweetens the jam and helps it thicken and keep as a preserve.
Lemon rind
Adds bright aromatic acidity that balances the sweetness of the sugar.

The step that matters

Judging the cooking time. Young and old rhubarb differ in fibre and water content, so the time changes how the jam sets. Undercooking leaves it runny, while overcooking can make it dull and stiff. Check for a set rather than relying on the clock alone.

Swap the ginger

How well each one fits the dish's main ingredients (rhubarb, sugar, lemon, almond):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Capersfits about as well
  4. Gingerthe original

Fit is the average pairing score against rhubarb, sugar, lemon, almond. Candidates are from the same food group and used in at least 100 recipes.
