Clear Brown Soup

Ingredients

Directions

  1. Clear the stock as directed.

  2. Stir in enough caramel to color the stock to your liking, but avoid adding too much to prevent a sweet taste.

  3. To make caramel, heat granulated sugar in a tin cup or iron saucepan until it bubbles brown.

  4. Add boiling water, 1 tablespoon for each tablespoon of sugar, and stir until dissolved.

  5. For added flavor, add 6 cloves and 4 allspice to the stock, then strain them out before adding caramel.

  6. Grate a raw onion and squeeze the juice into the heating stock for onion flavor.
