Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Forms the main body of the balls and supplies the savory flavor.
Mashed potatoes
Add moisture and body, making the mixture creamy and easier to shape.
Egg
Binds the mixture so the balls hold their shape while cooking.
Flour
Coats the outside so the surface browns and crisps in the frying fat.

The step that matters

Let the mixture cool completely before shaping. Beating in the egg over heat can partly set it, but the mixture must be fully cool and then chilled to stiffen, so the balls hold together rather than falling apart in hot fat.

Swap the potato

How well each one fits the dish's main ingredients (vinegar, egg, pepper, flour):

  1. Capsicumfits better
  2. Shallotfits better
  3. Mustardfits better
  4. Potatothe original

Fit is the average pairing score against vinegar, egg, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
