Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Scalloped Oysters

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Grease a bake-dish and cover the bottom with oysters.

  3. Add a layer of fine cracker crumbs over the oysters.

  4. Sprinkle with pepper, coarse sea salt, and bits of butter.

  5. Repeat layering with more oysters, crumbs, and butter until all ingredients are used.

  6. Pour a few spoonfuls of oyster liquor over each layer of oysters.

  7. Pour the same quantity of heavy cream over the top layer of crumbs.

  8. Cover and bake until hot throughout, then uncover and brown lightly.

  9. Serve with sliced lemon.
