Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the roast

  1. Preheat the oven to 400°F (200°C).

  2. Wipe the roast thoroughly with a clean wet towel.

  3. Place the roast in a dripping pan.

  4. Baste the roast well with butter or suet fat.

Roast

  1. Roast the roast in the oven, basting frequently with its own drippings.

  2. When partly done, season the roast with coarse sea salt and black pepper.

  3. Dredge the roast with sifted flour for a frothy appearance.

  4. Roast the roast for about 2 hours for a medium doneness, or 1.5 hours for rare.

Make the gravy and serve

  1. Remove the roast to a heated dish to keep warm.

  2. Skim the fat from the drippings.

  3. Add 1 tablespoon of sifted flour, a little pepper, and 1 cup of boiling water to the drippings.

  4. Boil the mixture once.

  5. Serve hot in a gravy boat.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Butter and flour barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rib or loin roast
Provides the main meat, whose fat and connective tissue keep the slices moist and flavorful during roasting.
Butter or suet fat
Coats the surface so it browns and stays moist, adding richness to the crust.
Sifted flour
Dusts the surface for a crust, and thickens the drippings into gravy.

The step that matters

Roast the roast for the stated time. Meat keeps cooking after it leaves the oven, and the interior temperature rises as it rests. Overcooking dries the meat and turns it grey, so checking doneness by internal temperature rather than time alone helps prevent this.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
