Fried Potatoes

Ingredients

Directions

  1. Slice cold boiled potatoes and sauté in butter until browned on both sides.

  2. If desired, roll the potatoes in flour for a crisp crust.

  3. Slice or cut raw potatoes into any shape and soak in cold water for 30 minutes.

  4. Dry the raw potatoes on a napkin and immerse in hot fat until cooked.

  5. Do not overcrowd the frying basket to maintain the fat temperature.

  6. Fry until the potatoes are amber in color, then drain and place on paper in the oven.

  7. Serve immediately to maintain crispness.
