Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the apple mixture so it holds its shape when unmolded.
Egg whites
Beaten into the filling to add lightness and a fluffy, airy texture.
Stewed apples
Provide the main fruit body and moisture of the filling.
Sugar
Sweetens the apple filling and balances the tartness of the lemon.
Lemon juice
Adds acidity that brightens the sweet apple flavour.

The step that matters

When the gelatin mixture is cool, add it to the apple mixture.. If the gelatin is still hot it can thin or partly cook the egg whites later, and if it is too cold it may set in lumps. Cooling it to lukewarm lets it blend smoothly and keeps the foam stable.
