Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the fruit that becomes tender and turns transparent as it cooks in the syrup.
Preserving sugar
Sweetens the dish and, with long cooking, helps preserve the fruit and make it clear.
White ginger
Adds its warm, sharp aroma and flavor to the syrup and fruit.

The step that matters

Boil the apples for 45 minutes until transparent. Long simmering in concentrated sugar syrup draws water out of the fruit and replaces it with sugar, which is what makes the apples look clear. Stopping early leaves them opaque and less preserved.

Swap the apple

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonfits better
  2. Orangefits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
