Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the cream into a smooth sauce as it cooks with the liquid.
Egg
Enriches the sauce and adds body when stirred in off the heat.
Rich cream
Adds fat and richness, giving the sauce a smooth, velvety texture.
Milk
Forms the main liquid base that the flour thickens.
Butter
Adds fat and flavour to the sauce and the toast.

The step that matters

Gradually add the boiling milk to the flour mixture. Adding hot liquid too quickly to flour and cream can form lumps, because the starch clumps before it disperses. Stirring while adding the liquid keeps the mixture smooth.
