Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Forms the gel that sets the dish into a firm, sliceable structure.
Egg whites
Whipped to a froth, they add lightness and an airy texture to the set dish.
Sugar
Provides sweetness that balances the tart lemon.
Lemons
Supply acidity and bright lemon aroma from the juice and rind.
Wine
Adds flavour and a little acidity to the liquid base.

The step that matters

Stir in the egg whites before the mixture cools. Once gelatine begins to thicken and set, it becomes too stiff to fold the beaten whites in evenly, so they must be added while the mixture is still fluid.

Swap the lemon

How well each one fits the dish's main ingredients (wine, sugar, egg):

  1. Vanillafits about as well
  2. Lemonthe original
  3. Applefits about as well
  4. Figfits about as well

Fit is the average pairing score against wine, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
