King Kalakua’s Curry for Shrimps and Chicken

Ingredients

Directions

  1. Grate the coconut, garlic, and ginger.

  2. Add the grated ingredients, onion shreds, curry powder, and milk to a pot.

  3. Simmer for about an hour until the oil is extracted from the coconut.

  4. Strain the mixture, pressing the coconut dry.

  5. For shrimp, heat the mixture again, adding butter, salt, and cornstarch to achieve a creamy consistency.

  6. Add the shrimp and heat through.

  7. For chicken, omit the onion in the initial preparation.

  8. In a pan, heat butter, add chicken pieces, and stir until glazed.

  9. Add just enough water to cook the chicken thoroughly.

  10. Once cooked, stir in the curry mixture and thicken with cornstarch.
