Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster meat
Provides the main flavour and the body of the croquette filling.
Eggs
Raw yolks bind the filling so the croquettes hold their shape when fried.
Butter
Adds richness and moisture to the filling.
Bread crumbs
Absorb moisture and give the filling body and a crisp outer coating.
Hard-boiled egg yolks
Powdered yolks thicken the filling and add a rich, mellow texture.

The step that matters

Shape and chill before frying. Chilling firms the butter and egg-bound mixture so the croquettes keep their shape in hot oil instead of spreading or breaking apart.
