Saratoga Potatoes
Ingredients
Directions
Slice the potatoes as thin as possible using a mandoline.
Soak the slices in cold water to remove starch.
Transfer the slices to fresh water with ice to chill thoroughly.
Drain a few slices at a time and dry them on a napkin.
Fry the slices in smoking-hot fat, keeping them separated.
Remove them as soon as they are slightly colored.
Drain the fried slices in a colander and sprinkle with coarse sea salt.
Place the drained slices on paper in a warm oven until all are fried.
Serve hot or cold; they can be stored in a dry place.
