Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Baked Onions

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Cook the onions in two waters, the second salted and boiling, until tender.

  2. Drain and press each onion gently in a coarse cloth to remove excess water.

  3. Place the onions side by side in a bake-pan.

Bake and make the gravy

  1. Season with salt, pepper, and butter, then add the stock.

  2. Bake in a 400°F (200°C) oven until browned.

  3. Remove the onions and keep them warm in a deep dish.

  4. Thicken the remaining gravy in the pan with browned flour.

  5. Pour the thickened gravy over the onions.

  6. Return the dish to the oven for two minutes before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Become tender and sweet as they cook, forming the body of the dish.
Butter
Adds fat and richness, helping the onions brown and flavour the gravy.
Stock
Provides liquid for the gravy and moisture during baking.
Browned flour
Thickens the gravy so it coats the onions rather than running off.

The step that matters

Pressing the onions dry. Excess water left in the onions dilutes the gravy and stops the surfaces from browning properly, so each onion should be gently pressed before baking.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter, flour):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
