Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the boiling water into a smooth, set base as it gelatinizes.
Egg whites
Whipped to stiff peaks, they add lightness and airy texture to the pudding.
Lemon juice and rind
Provides the sharp acidity and bright aroma that define the lemon flavor.
White sugar
Sweetens the tart lemon mixture and helps balance its acidity.

The step that matters

Fold the stiff egg whites into the mixture. Whites deflate if stirred or folded roughly or added while the base is too hot, losing the airy lightness that gives this pudding its texture. Fold gently and keep the whites stiff.

Swap the lemon
