What each ingredient does

Gelatine
Sets the liquid mixture into a firm, sliceable structure once chilled.
Bananas
Provide body, moisture and sweet banana flavour to the pudding base.
Whipped cream
Adds lightness and a creamy, airy texture to the set pudding.
Milk
Dissolves the gelatine and forms the creamy liquid base of the pudding.
Sugar
Adds sweetness and balances the flavour of the bananas and ginger.

The step that matters

Cooling until it begins to firm. Gelatine sets as it cools, so the mixture must be stirred over ice or cold water only until it thickens slightly. If it sets fully in the bowl, it will not pour into the mould smoothly; if it is left too warm, it will stay loose and may not hold its shape when turned out.

Swap the ginger

How well each one fits the dish's main ingredients (banana, sugar, walnut, milk, cream):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Celeryfits about as well

Fit is the average pairing score against banana, sugar, walnut, milk, cream. Candidates are from the same food group and used in at least 100 recipes.
