Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stewed apples
Provide the main body and fruity flavour of the filling.
Gelatin
Sets the apple mixture so it holds its shape when unmolded.
Egg whites
Whipped into foam, they lighten the filling and add a airy texture.
Sugar
Sweetens the filling and balances the tartness of the apples and lemon.
Lemon juice
Adds acidity that brightens the apple flavour.

The step that matters

Fold in the egg whites at the right moment. Egg whites must be folded in only when the mixture begins to thicken. If added too early, the thin mixture deflates the foam; if too late, the gelatin sets before they blend and leaves streaks or lumps.
