Why it works: Syrup and gelatin match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 192 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness through their proteins and fat.
Gelatin
Sets the cream so it holds its shape when unmolded.
Whipped cream
Adds lightness and a creamy, airy texture to the set dessert.
Preserved ginger
Gives the dish its main flavor and a chewy bite.
Milk
Forms the liquid base of the custard, adding creaminess.

The step that matters

Stir the mixture until thick. Egg yolks thicken as they heat, but overheating can scramble them into lumps. Use a double boiler and stir gently to keep the custard smooth.

Swap the ginger

How well each one fits the dish's main ingredients (milk, sugar, egg, syrup, gelatin, cream):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Peppermintfits less well

Fit is the average pairing score against milk, sugar, egg, syrup, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
