Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Combine the mashed potatoes, warm milk, eggs, lard, butter, and salt in a bowl.

  2. Add flour gradually until the mixture can be molded.

  3. Dissolve the yeast in a little warm water and mix it into the dough.

  4. Let the dough rise for about 5 hours until light.

Shape and bake

  1. Cut out the muffins and place them in pans to rise again.

  2. Bake in a hot oven at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add starch and moisture that give the muffins a soft, tender crumb.
Eggs
Add structure and richness that help the dough hold its shape.
Flour
Forms the gluten network that gives the dough its body and shape.
Yeast
Produces gas during the rise, making the dough light and airy.
Milk
Adds moisture and helps soften the dough while enriching its flavor.

The step that matters

Let the dough rise for about 5 hours until light. Yeast needs enough time to produce gas and stretch the gluten network. Under-proofed dough bakes dense, while over-proofed dough can collapse and lose structure.

Swap the potato

How well each one fits the dish's main ingredients (milk, egg, butter, flour):

  1. Chivefits about as well
