Hashed Brown Potatoes

Ingredients

Directions

Prepare

  1. Chop the cold boiled potatoes finely and season with salt and pepper.

  2. Melt the butter in a frying pan.

Cook

  1. Add the potatoes, spreading them evenly on the bottom.

  2. Cook on the back of the stove over low heat, turning occasionally to brown evenly without stirring.

  3. Once well crusted on the bottom, roll the potatoes carefully like an omelet and turn out flat onto a hot platter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starch that crisps and binds into a golden cake when cooked.
Butter
Adds fat for browning the surface and a rich flavour.

The step that matters

Cook on low heat without stirring. Potato starch needs sustained, gentle contact with the hot pan to form a crust. Stirring breaks the surface and prevents the browned layer from forming, so the cake stays pale and falls apart.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter):

  1. Capsicumfits better
  2. Potatothe original
  3. Carrotfits less well
  4. Onionfits less well

Fit is the average pairing score against pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
