Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Preserved Citron

Ingredients

Directions

Prepare the citron

  1. Pare the green rind from the citron and scrape the inside well.

  2. Cut the citron into pieces no longer than 2 inches.

  3. Boil the pieces in clear water until easily pierced with a straw.

Make the syrup and cook

  1. Make a syrup with 1 pound of sugar and ½ pint of water for each pound of fruit.

  2. Add the lemon juice and ginger to the syrup.

  3. Boil everything together until the citron is transparent.

Bottle

  1. Bottle the mixture while hot, removing the ginger bag before sealing.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
Forms the bulk of the preserve and becomes tender and translucent as it cooks in syrup.
Sugar
Sweetens the preserve and draws water out of the fruit, helping it keep.
Lemon juice
Adds acidity that brightens the sweetness and supports the preserve's keeping quality.
Ginger
Contributes a warm aroma and gentle spice to the syrup.

The step that matters

Boil until the citron is transparent. Sugar must slowly penetrate the fruit to replace its water; cooking too briefly leaves the citron opaque and less preserved, while overcooking can toughen or darken it.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
