Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Melts with flour to form a roux that thickens the sauce and adds richness.
Flour
Thickens the melted butter and milk into a smooth, stable sauce.
Milk
Forms the liquid base of the sauce, which thickens as it heats and starch swells.
Asparagus
Provides the main vegetable, cooked until tender so it soaks into the toast.

The step that matters

Stir the sauce constantly while it thickens. Flour starch can clump and scorch on the bottom of the pan if left unstirred. Constant stirring keeps heat even and lets the starch swell evenly, giving a smooth sauce.

Swap the white pepper

How well each one fits the dish's main ingredients (asparagus, butter, flour, milk):

  1. Cinnamonfits better
  2. Capersfits better
  3. Nutmegfits better
  4. White pepperthe original
