Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a soft, sliceable body as it cools.
Cream
Adds richness and a smooth, velvety mouthfeel to the set dessert.
Loaf sugar
Sweetens the dish and, rubbed on the lemon rind, draws out its aromatic oils.
Lemons
Provide acidity and bright lemon aroma that balance the sweetness and richness.

The step that matters

Pour the mixture gently into the cream. Gelatine begins to set as it cools, so pouring slowly and stirring until cold keeps the mixture evenly dispersed and prevents lumps or streaks in the final set cream.

Swap the lemon

How well each one fits the dish's main ingredients (sherry, wine, sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits better
