Rolled Bread and Butter

Ingredients

Directions

Prepare the bread

  1. Use bread that is no more than 24 hours old and has a spongy, elastic texture.

  2. Butter the bread before cutting.

  3. Cut the bread into very thin slices using a sharp knife.

  4. Remove the crust unless it is very soft and thin.

Roll and arrange

  1. Roll each slice into a bolster shape gently but firmly, pressing just enough to hold the shape.

  2. For variation, spread the bread with savory butter or other spreads before rolling.

  3. Arrange the rolls in a pyramid on a decorative dish and garnish with fresh parsley.

  4. Sprinkle the outside of the rolls with minced parsley and lobster coral or red crumbs.

  5. Serve on a bed of well-seasoned watercress.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh bread
Its spongy, elastic texture lets thin slices roll without cracking.
Butter
Coats the slices, adding richness and moisture so they hold together and taste savory.

The step that matters

Roll each slice gently but firmly. Bread that is too tightly rolled can crack or tear, while a loose roll will unwind. Fresh bread that is slightly elastic and thinly sliced rolls more easily, and buttering it first keeps the layers pliable and helps them stick together.

Swap the parsley

How well each one fits the dish's main ingredients (bread, butter, lobster, watercress):

  1. Capersfits better
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Nutmegfits less well

Fit is the average pairing score against bread, butter, lobster, watercress. Candidates are from the same food group and used in at least 100 recipes.
