Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine flour, butter, powdered sugar, chopped almonds, and cinnamon.

  3. Work the mixture together until well combined.

Shape and bake

  1. Place a small piece of dough into shell-shaped patty tins.

  2. Press the dough thin and evenly with your thumb.

  3. Bake until lightly golden.

  4. Carefully remove from the tins and turn them over onto a plate.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat that makes the shells short and tender as they bake.
Flour
Provides the structure that holds the shells together after baking.
Powdered sugar
Adds sweetness and helps the shells brown lightly and stay fine-textured.
Finely chopped almonds
Contribute nutty flavour and a slightly crumbly texture to the dough.

The step that matters

Press the dough thin and evenly. Uneven or thick dough bakes unevenly, so thick spots stay pale and soft while thin edges over-brown. Even pressing gives a uniform bake and shells that release cleanly from the tins.
